We believe great food should be shared, which is why we invite you to an evening where you can connect and share stories over a meal. It’s not just about the food; it’s about the connections we make and the community we build together, one meal at a time.
This April, Sammy brings his passion and philosophy to The Momentary Supper Club. With every dish, his goal is to highlight the beauty and weight of simple yet respectfully elevated dishes that aim to not only nourish but create moments of connection and delight, celebrating the intersection of food, art, and community.

The ticket includes a three-course meal and a welcome mocktail. Alcoholic beverages will be available for purchase. You must be 21 to consume alcohol.
ABOUT THE CHEF
Born and raised in Fayetteville, Arkansas, Sammy Townsend discovered his love for food at an early age, drawn to the way meals brought people together and created lasting memories. His 15-year professional culinary journey began while still in high school, starting a dinner party service where he and his partner would arrive at a client’s home and provide everything one could need—from the food itself to the plates, wine, music, and cleanup. From this experience, the ethos of hospitality and attention to detail became the foundation of his career.
In 2012, Sammy and his partner launched Bouchée Bistro, a French-inspired food truck that introduced accessible yet refined dishes to Northwest Arkansas. Bouchée eventually grew into a brick-and-mortar restaurant and a second retail-focused location, Bouchée Kitchen, where Sammy honed his skills, building experience and refining his approach to hospitality. After closing the restaurant in 2016, Sammy’s path led him to join Onyx Coffee Lab, collaborating with owners Andrea and Jon Allen to create Providers by Onyx, a culinary arm focused on crafting exceptional food to complement their coffee program.
As the Culinary Program Director for Onyx, Sammy has taken on the challenge of scaling operations while maintaining the quality and creativity that first inspired him to cook. He’s driven by the belief that food is more than sustenance—it’s a means to tell stories, build connections, and care for others. His approach focuses on thoughtful simplicity, celebrating the art of food as a shared experience that bridges cultures and inspires conversation.
